This is the exact recipe I use as a professional sushi chef.

Ingredients

  • Rice Vinegar – 4 cups
  • Sugar – 3 cups
  • Mirin – 1 cup
  • Salt – 1/8 cup
  • 1 piece of Kombu(5″x5″)

Step 1 – Add the Vinegar First

Pour the rice vinegar into a mixing bowl.

This is the most important step because sugar and salt dissolve much more easily in vinegar than if they are added first.

Step 2 – Slowly Add the Sugar

Gradually add the sugar while stirring until completely dissolved.

Do not rush this step.

Step 3 – Add the Salt

After the sugar has dissolved, add the salt and continue mixing.

Step 4 – Mix in the Mirin

Pour in the mirin and stir until everything is fully combined.

Step 5 – Add Kombu

Place one piece of kombu into the sushi vinegar.

The kombu slowly releases natural umami, giving the sushi vinegar a deeper and richer flavor.
